Quick Fixes- *NEW!*

What do you do when it’s 5 o’clock and you haven’t started dinner?  Have no fear!  You can whip up something simple and great in no time!  Here are some ideas to get you going- please send me your family's favorite "quick fixes."

***There have been numerous studies about the importance of gathering your family together regularly for dinner, but it seems like that is so hard for many families today!  The benefits of eating together range from increased physical and emotional health, to better grades in school, to reduced adolescent drug and alcohol use and so on.  The recipes on Pantry Pickins are supposed to be fast and easy as well as cheap, but this section is for when you don't have time to really cook. I wanted to have a list of quick fixes (no recipes- just things you can throw together as your kids set the table and empty the dishwasher or whatever) to help make that even easier for you and I, and save the cost to our wallets and waist line that we incur when we go for fast food!

Grilled Cheese Sandwiches served with canned soup

 

Quick pizzas:  combine 2 tsp pesto sauce from a jar with 1 can tomato sauce, spread over French bread, English muffins, Pillsbury biscuits, tortillas or whatever else you can think of, top with shredded cheese and pepperoni or whatever and bake at 350 until cheese is melted!

 

Potato Bar:  cook 5 potatoes (washed and poked with a fork) in microwave safe dish with about an inch or so of water- cover and cook on high for about 9 minutes or until potatoes are soft.  Cut in half and top with chili, cheese, cooked broccoli or whatever your family likes!

 

Cheese Crisp dinner:  melt a little butter in a skillet and put a flour tortilla sprinkled with cheese, and then another tortilla.  Flip and brown other side.  Serve with warmed refried beans and salsa.  You can even top the tortilla with the beans and add cut up tomatoes, onions or whatever and eat like a Mexican pizza.

 

Taquito Enchiladas:  dump a package of frozen taquitos into a casserole dish- pour a can of enchilada sauce over them and top with cheese.  Bake at 350 for 20 minutes or until heated through.

 

Quick Pasta “bake”:  boil some rotini or ziti pasta and pour in casserole dish.  Stir in warmed jar of pasta sauce and top with mozzarella or Italian mix cheese- place under broiler in oven for a couple minutes until cheese is melted and starts to brown.

 

Bacon, Lettus and Tomato sandwiches

 

Ham and cheese melt sandwiches- place ham, lettus, tomato and onions on a slice of toast or english muffin- top with cheese and broil until cheese melts.
